Apfelküchle (Apple fritters)

Fancy something sweet? Swabian apple fritters are a delicious dessert or sweet dish and taste particularly good served with vanilla ice cream or custard.

Recipe for apple fritters
Ingredients for 4:

  • 200 g flour
  • 3 eggs
  • 1/4 l milk
  • 1/8 l beer
  • 1 pinch salt
  • 4 large, sourish apples
  • 1 lemon (or arrack, rum, kirsch)
  • 1 tbsp sugar
  • 1 tbsp cinnamon
  • clarified butter (or cooking fat) for deep frying

Beat the flour, eggs, milk, beer and salt together to make a fairly thick pancake batter. Peel and core the apples using an apple corer, then cut into slices about 8 mm thick. Moisten the apple slices with lemon juice (or arrack, rum or kirsch). Dip the apple slices into the pancake batter and fry them in deep fat or clarified butter until crisp and golden.

Blot the fritters to remove excess fat and sprinkle with sugar and cinnamon. Serve hot.
